Porkapolloza II: High on the Hog announced

Created a new website to announce the date for Porkapolloza II: High on the Hog. You can check out the details over at releasethecracklins.com.

My hope is to find some time to build out a quick site to post all the information on this year’s big BBQ party being held on Saturday, July 31st.

I’d love some feedback on what information you’d like to see available on the site…

Smoked BBQ Potatoes

It’s the start of the new season and what better way to kick off but then to move forward. Just decided to try something different for the start of 2010′s BBQ season.

The 2010 BBQ Season begins.

Snow is gone. Finally. So now I have finally had the chance to bring out the smokers and get this season underway. And what better way to get things going then just going hog wild with my favorite BBQ sauce Stubbs.

The Grill Around The Globe

In 2006, we celebrated fire with Firewalker steaks. In 2007, it was Chickenfest… and 2008 was Porkapoloza!! So what can we do to top all THAT?!

I wanted to see if I could reproduce the Bacon Explosion, shot for shot. My thanks to BBQAddicts.com for the use of the images.

I like big butts and I cannot lie…

Getting up every day at 5:45am for work can be tough. However, I just discovered that waking up at 3 in the morning to put a pork shoulder on my WSM isn’t so bad.

My first Weber Smokey Mountian session (part 2)

As we saw in Part One… so far the first Weber Smokey Mountain smoke has been pretty uneventful.

Sometimes, the simplest things are the best things. This is a fool-proof chicken marinade.

My first Weber Smokey Mountian session (part 1)

Things started out easy enough. Simple three page newspaper roll into the bottom of the chimney. Lit well and took a good 20 minutes to ash over. It seemed like a long time but it did give me the chance to take care of some other things. I honestly believe that this early in the process – Nicole had her doubts. I imagine she suspected the very real possibility of having to save dinner by whiping out a quick dinner after I mess this up and the chicken is ruined. Not that I blame her. Sometimes, trying new things doesn’t always turn out exactly how I plan it. But not this day… this day would be different.
